Vitamins are organic molecules that are essential micronutrients required in small amounts for the proper functioning of living metabolism. This chapter is going to explain solid phase extraction (SPE) for the determination of vitamins in food and beverages. It focuses on their benefits, deficiencies, and why the body needs them. It also explains the essential role of SPE methods in the assessment of vitamins in food and beverage samples. It emphasizes the need for accurate analytical techniques in determining the nutritional value of consumables.
