Alternative Protein Sources in Gastronomy and Food Science: Bibliometric Analysis on Web of Science Database

Abstract

This study aims to reveal academic trends and collaboration structures focusing on alternative protein sources in the fields of gastronomy and food science between the years 2015-2025. A total of 748 documents retrie- ved from the Web of Science database using the keyword “alternative protein sources” were analyzed through scientific mapping and descriptive bibliometric analysis methods through VOSviewer software. The findings indicate that the majority of publications address the fields of food science and technology (240), agriculture (213), veterinary sciences (96), and nutrition (67). In addition, Prof. Dr. Laura Gasco has been identified as the author with the highest number of publications (eight) while Animals has emerged as the journal with the highest contribution, publishing 51 articles. Keyword co-occurrence analysis revealed high densities for the terms “insect” “sustainability” and “alternative protein.” The scientific maps generated in this study provide valuable insights into priority research areas and collaboration opportunities in gastronomy and food science for policymakers, researchers, and culinary practitioners leading to the advancement of sustainable nutrition and culinary practices.
Bu çalışma, 2015–2025 yılları arasında gastronomi ve gıda bilimi alanında alternatif protein kaynaklarına odaklanan akademik eğilimleri ve iş birliği yapılarını ortaya koymayı hedeflemektedir. Web of Science veri tabanından “alternative protein sources” anahtar kelimesiyle elde edilen 748 belge, VOSviewer yazılımıyla bilimsel haritalama ve betimsel bibliyometrik analiz ile sistematik literatür taraması (SLR) yöntemleri hibrit bir yaklaşımla birlikte incelenmiştir. Bulgular, yayınların büyük kısmının gıda bilimleri ve teknolojisi (240), ziraat (213), veterinerlik (96) ve beslenme (67) alanlarına ait olduğunu göstermiştir. Ayrıca en çok yayın yapan yazarın sekiz yayınla Prof. Dr. Laura Gasco, en çok katkı sağlayan derginin ise 51 yayınla Animals olduğu belirlenmiştir. Anahtar kelime yoğunluklarında ise “insect”, “sustainability” ve “alternative protein” kavramları tespit edilmiştir. Çalışma sonuçlarına göre elde edilen bilimsel haritalar; politika yapıcılar, araştırmacılar ve mutfak uygulayıcıları için gastronomi ve gıda bilimi alanında öncelikli araştırma alanlarını ve iş birliği fırsatlarını göstererek sürdürülebilir beslenme ve mutfak uygulamalarının geliştirilmesine ışık tutacaktır.
